sausage guys need advice please

When I first started making sausage I used the silicone. One day I wanted sausage and didn't have any. Ever since then I have used either Crisco or lard and have never had any issues. I have the grizzly 5lb suffer and usually run it through the dishwasher without any issues. I also have two el cheapo Cutting boards from Ikea that have s lip that holds the counter on them.I use these exclusively fit making sausage and have drilled 4 counter-sunk holes to use bolt, washers and wing nuts to hold the stuffer.

You made a good choice, I have a big 12 lb vertical stuffer but wish I had bought the smaller one. In a big stuffer when the meat starts to firm up it can be very hard to crank especially if you are stuffing small diameter links like breakfast links or buck sticks, however it works great when stuffing large 3 lb wt casing like summer sausage because you have the volume and don't have to refill as often and the tube is larger for that as well. I would rather spend more money on the grinder if you plan on doing a lot. A bigger throat on the grinder and a little more HP is a plus in my humble opinion. Now get to crankin out some sausage.!!

This is what I use on all my food prep equipment....   Mineral oil base....   will not support mold or bacteria.....

Sorry about my post....   You said "stuffer" and I was thinking "grinder"....  it's tough getting old.....

I had a feeling it was something like that, Dave. Been there. Done that.
