Hello, My name is Bob. I was born and raised on the West Bank of the Mississippi River across from New Orleans. I lived there 61 years and after Hurricane Katrina My wife and I decided to move further North away from the Gulf. We moved 100 miles north and now live in Easleyville, LA 4 miles south of the Mississippi border.
I am 69 years old and a retired Fire Fighter. I now spend my days working in my vegetable garden, shooting the bull with the neighbors, the computer, aggravating the wife and watching TV.
After tasting fresh smoked meats prepared by my daughter and her husband, we decided to try our hand at smoking. We purchased a Cajun Injector electric smoker and have so far smoked a pork loin roast and chicken leg quarters and they tasted great.
I make my own ground beef, breakfast sausage and plan on trying making smoked sausages. I have read a few threads here and have already used some hints. I plan enrolling in the 5 day classes and purchasing the book.
Now I have to learn to navigate the forum.
