Well I bought two racks of BB ribs and didn't want to stay up late after coming home from Mom's yesterday so they had to get cooked somehow! Cut both in half actually used mustard for glue seeing I had some spare time waiting for the smoker to warm up,one rack was SPG and a touch of maple syrup the other coated with Big Ron's Hint of Houston. Tossed them on the WSM at 200 ish and back to work when I got home the WSM was at 208 so I opened up one cent fully to get them going a little better. Smoking over maple and pecan.

Some good looking ribs. I will sauce sometimes to have something different

Thanks Richie, I was only going to sauce the maple rack as I added some syrup to the sauce,but after cutting a sample off the other rack and not being to thrilled sauce was the way to go.
 
The ribs look great. The don't look fall off the bone but should have some nice pull--just how I like them. I like the idea of a maple brine, so I'll be watching for it.
