Hey All! this past weekend i did a lot of celebrating mother day with my Mother and My wife's mother. But before all the celebrating i got out Black Betty and made some food! I made food ahead for the North Carolina SMF Gathering next weekend. One of the things i plan on taking is a tray of BBQ riblets. ( some of you may have heard of my meat candy recipe before.)  So without much more banter here is the pics...

First cut 5# CSR's (country style ribs) into cubes. I trimmed about 3/4 # of fat away from them but still left some marbeling.  


Coat in yellow mustard so the rub will stick..


Coat in dry rub heavily. i tossed the meat around several time sand sp[rinkled on a lot of rub for these


I used a Wild Cherry blend rub that i picked up from butcher BBQ


Smoked at 250-300 Degrees for about 3 hours and then vacuum sealed the meat and stuck in the freezer


I will break them out Friday to thaw and then sauce them Saturday and throw in the oven for 20 minutes and serve hot!

I will try to snap a pic of finished product and add to this thread.

i did try a couple without sauce and they were like smoked butter in your mouth just so good!

The Weather Channel is saying 84 and sunny 0% chance of precipitation! Hope that doesn't change!
