Well I tried to hold out a little longer. Then I came across this marvelous bone in pork butt at my favorite store. I couldn't resist. So earlier I began the first steps in prep. Normally I prefer to let it in the fridge and let the rub do its thing for 24 hrs. Today will be only 12 hours. But my MES hasn't let me down yet. I will be doing pics on next post. I always share with you good people. Count on it being in my smoker at 11pm tonight. Fill my block with good smells of smoke.
 
Well I had it in the smoker for 15 hrs. It came out really good.
Started with a beautiful 9.7 lb butt. I injected it with apple juice then used the dry rub. Sat for 12 hrs in fridge then before going into smoker I injected it again with the juice and an other light coating of rub.
15 hrs later.
Oh man it came out awesome. Pulled real easy. Moist as heck. My girlfriend loved this one. This was a good one to keep the notes on. Here was dinner today.
Next was on a onion bun.
Heres to another good smoke.
