New to "real" smoking

Thread Starter

So I grew up on an Indian rez in southern Oregon and we used to smoke fish or goats in an old hollowed out freezer with a fire at the bottom and I loved the smoke flavor and preservation.  Now that I'm older I have a friend with a huge smoker he made out of an old 5000 gallon propane tank and he makes some epic foods for our employee feasts.  I'm not that quite ambitious and I don't have that much money so I bought a cheap char-grill offset smoket and I'm itching to get started again!

Aho, my brother. Welcome from SC. I'm sure that you will enjoy this great site. There are lots of really good folks who are always ready to share their ideas, recipes and tips. All you have to do is ask and keep reading.

Good luck and good smokin', Be sure to post some pice of your cooks. Joe
