Kev. you've got a great eye my friend.  Those are indeed oak chips.  And that color on the bird is from oak.  One of my projects while the missus was away was to saw / split more post oak for the BIG smoker (AKA Locomotive Breath).

Those are chips from my chopping. I gathered a few handfuls and tossed em in the beer cooler ( by that time was empty). 

The color was okay.  But not as near as pretty as yours turned out.

You've got a good point about the rub on the skin diminishing the appearance. I look at mine, then yours and the difference is clear. b
It looks like Post/white oak, and a light application at that. Its why your cracks and crevices are lighter. Its a beautiful smoke job. Most have a heavy hand applying smoke. A light smoke is normally appreciated IMHO.

Yup we are on the same page as usual. Birds need a kiss of smoke.  Beef and Pork can take more... IMHO. b

Thank you Gary! I watched that IT. 165 IT at the breast and then let her sit for a bit made for a very moist bird.  This was a "free range" chicken.  I'm not sure being "free" how it found itself on my smoker.... But happy it did! B

Love the bird. My mini is so fun to cook on. It's a rock solid smoking machine. I love chicken but found doing the a patch cock to be a pain in the butt.
 
12ring, you need to cook another spatchcocked bird right away. I think it's easy and does a really good job on the bird. It cooks quicker and more even. I think if you give it another couple of tries, you'll really like it.
