Got a slew of beef ribs in cryovac that the local HEB was trying to get rid of. 16 little racks for about $20. Not really meaty but cheap.
Put them on this morning on the Trager meat side down with 100% mesquite pellets and a Amazen tube full of the same pellets. Smoked at 170* for 2.5 hours. Turned the meat side up and kicked up the tempt to 265* Let them go a couple more hours. Got great color and bark going the panned them the covered with foil for about 90 minutes.
I love beef ribs. Even skinny cheap ones.
These containers are cheap-about a dollar- and make a good rub dispenser
If you are in Houston the Texas Star Grill shop sells this brand and has 100% Hickory and Mesquite. Got 3 for $14 a piece and a 4th free. I really like these pellets.
