I'm new to smoking I've converted a subway oven into my smoker the top is a 450 degree convection oven which I will leave for big family dinners if we need a second oven or a hot day.the bottom was a proofer it was used for raising bread dough I had to do a few mods to the proofer but now I can control it from 0 to 300 degrees and I tied the vent into my garage vent.
