Smoked alot of meat over the years but never tried wings. The mes is set at 275 with a chunk of apple wood. Plan on 2.5 hours. More pics to follow...
 
Saused them with franks red hot a little butter and a little ghost pepper powder. Cant wait to eat them!!!!

,, I usually cut the wing tips off with a kitchen knife, then I can get more wings on the tray LOL

When I do wings I let them absorb all the smoke they can. Same as you 275 for about 2.5 hours. Then I toss them on the grill at 350 for about 15 minutes with either BBQ sauce or a buffalo sauce. This gets the skin nice and crisp and maintains the moisture.
