So, I finally bit the bullet and made some kielbasa for Orthodox Easter, or Pascha. I found a recipe from letsmakesausage.com. After finding some pork shoulder for about $1.49 a pound at Costco... After church today, I started my first sausage project.. What do yinz think??

Good Looking sausage!     I bet you will be investing in a dedicated stuffer before long.
Beat me to it! Looks great but you will cut your time to stuff way down with a Stuffer. 5 Pound Stuffer are under $100 and places like Northern Tool & Equipment runs sales and stocks inexpensive replacement parts. Grizzly sells a nice unit too...JJ

Agreed, I have a Northern stuffer.  I stuff 17 mm casings with the plastic gear's, under 100 bucks.
 
That looks awesome...I have yet to try Kielbasa but my wife has been pushing me to. It is her favorite. Let's us know how they are.

In for the result!! The town I live in has some serious Polish folks here, with a couple kielbasa companies located in town.

edit - (Ha! "yinz" - the first time I heard that was in basic training. I forget the guys name, but we called him "ash tray", because for some effed up reason, he put cigarettes out on his forehead!)
