So my Mrs found an awesome recipe for pork tacos! I tweaked it out a little and they turned out amazing!
Pork tacos
Ingredients needed:
1/2 lb left over pulled pork (enough for 4 tacos)
1/2 cup of Budweiser (any lager beer will do)
1/4 cup cider vinegar
1 tbl paprika
1/2 tbl kosher salt
1/4 tsp black pepper
1/4 tsp garlic powder
1/8 tsp chipotle chili powder
1/8 tsp cayenne.pepper
Mix all dry seasoning together in a bowl.
Bring beer and cider vinegar to a simmer. Then add left over pulled pork. Sprinkle with seasoning mixture (I used maybe 1/4 of the seasoning mixture because the Mrs doesn't like things too spicy). Let simmer for 5 minutes.
Warm soft taco shells in a skillet.
Add whatever topping you like. We used pickled red onions, tomatos, cotija cheese and cilantro.
Mexican corn
Ingredients needed:
4 ears of sweet corn
3 tbl real mayo
1/4 tsp garlic powder
1/2 cup cotija cheese (shredded fine)
2 tbl fresh cilantro
Paprika
Lime
You can either grill or bake the corn. We choose baking in aluminum foil with 1 pat of butter. Baked for 35 minutes on 350.
While corn is cooking. Mix mayo and garlic powder.
When corn is fully cooked. Roll in mayo mixture. Then sprinkle with cotija cheese, cilantro and a squirt of lime.
Gave a whole new life to the left overs! So so good! Hope you folks enjoy!
