Hi Lucas and welcome to the forum. It is good to see a growing number of Brits on here from the south. What kind of BBQ experience are you getting at the restaurant and what are they using to smoke?

hi Wade thanks for welcome,iam working in london(not sure I can use name of the restaurant here,we are working on indoor cookshack fast Freddy,smoking beef,pork ribs,shoulders and briskets,hope with your advice guys we can be the best in country;)

Hi Lucas - Yes you can name the restaurant - that isn't a problem here so long as it isn't overt advertising. Thumbs Up. I have a Cookshack FEC-120 too so we may be cooking on the same type of smoker.
