Greetings All!
New to the forum and the "world" of smoking. Have always had the love and taste for it, but have only played around a bit on my BBQ. I joined this forum and read and researched for hours. I took the plunge and bought the MES 40 BT and also the AMNPS 5 X 8 tray. I would like to give a big Thanks to Bear and all the others, who have spent HOURS posting the invaluable amount of info for all on this forum.

Last weekend I did 2 racks of babybacks. Did a homemade rub the night before, wrapped in saran wrap. Pulled them an hour before smoke so they could get to room temp. Thru them in the smoker and did the 2-2-1 method. I must say they were the BEST ribs I have ever made or tasted!


Today I plan to do a pork loin and 2 whole chickens! Will post the results later.

Finished product! Could not have done it without all the great info on here. The pork was amazing and JUICY! Pulled it at 148 IT. Wrapped in foil for 30 minutes and came out great! Pulled the chicken at 163 IT and let it rest for 30 minutes! Super Juicy! Followed the nekkid chicken recipe. Used Apple pellets in the AMNPS. Made some baked beans and threw some of the bacon from the wrap in them, WOW they were good! Can't believe I waited this long to start doing this. Joe, I have been to the Boeing plant in Charleston many times. I must say it sure is BEAUTIFUL in those parts! Definitely a place I would consider moving too!
