I tried doing a search for the answer, but didn't notice anything so thought I would ask.
I'm smoking a 17 lbs brisket for Saturday and I know when I do it whole I am looking at about 1.5 hours per pound.
However, this sucker is just too big to fit in my Bradley and I'm thinking best thing is to cut it in half and smoke the two pieces at the same time.
Will I still be looking at about 1.5 hours per pound for the total? Or is it 1.5 hours per pound per small piece?
I'm trying to figure if I should give myself 24 hours, or 12 for the process.
