First time snack sticks made..

I haven't been on the forum for awhile but that doesn't mean I haven't been cooking. No sir. I've decided to try my hand at sausage making and somebody put the idea into my head that I was cool enough to make snack sticks. Lol. I used a beef/pork combo with a run of the cabinet spice selection. I'd like to say they were good but I always think they can be better no matter what I make. Friends and family love them. I'm on the sideline with em. Maybe I'll do something different next time. Shot them into a 19mm collagen casing with my vertical stuffer.

Nice looking! Is that an old gasser with a cast iron pan with charcoal in it as the heat source?

I like what I do but I always think there's something that can be done better. My wife says I'm crazy. Lol. My kids reap all the benefits. They love anytime I'm smoking or firing up the grill.

It's the Masterbuilt XL propane smokehouse I bought about 3yrs ago. I haven't used it in a long time and was going to give it away but decided I should use it for sausages and snack sticks. It has brought me back to loving it all over again. I brought it and my amazn pellet tube back to life. They've just been sitting forever! Lol. The cast iron didn't get hot enough for the sugar maple wood to smolder and smoke up for me at 150 degrees.

I have a smoke hollow that I'm going to do same with. Use it only for fish usually but sticks sounds good to
