Got a potluck at work tomorrow, and as usually I've decided to smoke a butt!
We are moving, so don't have access to my rub and Jeffs Rub supplies, so I grabbed a Mcormick pork rub, and also added some coffee grounds, salt and turbino sugar.
Got an 8 pounder and got her all rubbed up and into the MES till tomorrow morning!

About 4 hours in and put in the Mav probe into the meat. My chamber probe has been steady with the MES setting, holding perfectly at 245 (though I just lowered her to 235 slice I think I'm going a bit too fast.

Anyway I am having some woes with my Mav probe, I use 3 different therms, the Maverick, a ThermoPen (for instant read at the end of cooks) and a cheaper Poulder brand probe just for redundancy sake. For the last year they have all been within a few degrees of each other, and I always side with the Mav, but the last 2 cooks the Mav has been bouncing around, and 10-15 degrees higher than the other 2, but that being said I did the boil test (adjusted for barometer) and at least during that they all 3 were within a couple of degrees again!?????? What the heck? Perhaps I shorted the Mav cable, and just worked out good during the boil for some reason. (As a note, the chamber probe seems to be working perfectly.)
Anyway, on this cook it is jumping a bunch, and I readjusted a few times to make sure not on bone or in big fac deposit, but I just can't figure the thing out.

Any thoughts guys?

Good start. My MAV Probe has been wonky. Did some Pork Tenders. The MAV said the IT was 130 and after the rest said 137. Cut them and they were still Rare in the center 120 tops...JJ
 
When they start doing that, it's best to just get a new probe. I doubt if there is anything wrong with the unit. The replacement probe wires are longer anyway, so you get a little more wiggle room.

Well, I think the Mav evened itself out as some point from wiggling wires and foil wrapping the butt, and seemed to be right on point in the morning.
I went ahead and ordered a new probe, so we shall see how that works, I'll just be more careful with cleaning it and not even bother cleaning the wire, just the probe point going forward.

Pulled her out at 6:40am at IT 199, and she rose to 203 after resting for 10 mins while o got ready for work.


Wrapped it up in a cooler and took it to work. Just had to pick it up and squeeze a bit to get it to fall apart perfectly.


I'll post one last shedder pic once I get back over to the break room.

The pork is REALLY good, probably the best I have done, it turned out amazingly tender, and I went light on the run to let the pork really be the star!
I put a bit of it on a sweet Hawaiian roll with some sauce and the meat was just about as tender as the roll itself!
Anyway it's a big hit so far and I don't anticipate having any leftovers.


There is a very subtle and delicious coffee flavor, it is more in the aroma than the taste, but I think I I would add a bit or even quite a bit more on the next one, in fact, I have been thinking on the next one just doing salt, pepper, garlic and coffee grounds just to see what that would be like.

Thanks Al, Didn't know they were longer, that will be nice, since im always getting snagged up trying to move things around!

Oh and by the way, I loaded the AMNTS with a 50/50 mix of Oak and Peach pellets!

She stopped smoking about 4am as far as I can tell, which was perfect as that is about when I foiled her up, I have it sitting right by the element, so it does burn down a bit faster than when I put it up on a rack.

I recently replaced my 18" AMNTS with their new expandable 12" to 18" one and I love it, it is the best!
