It's another beautiful (who am I kidding, it's cold, windy, and overcast) Wisconsin day for bbqing.
Picked up some baby backs on sale this week and thought hey would be good on the wsm. I have to say it was a good craigslist find but a little tight for ribs.
Glazed the ribs this morning with my home made maple syrup. It gives just enough sweetness and helps the seasoning stick.
I have stopped using a full blown rub and just sprinkle kosher salt, paprika, onion powder , garlic powder , cumin, and chili powder. I really like letting the meat shine since I quit slathering it with lots of spices.
Using kbb and plum wood for the smoke. Debating on foiling in a couple hours. Wife likes fall off the bone, I prefer a little more tug which means they will probably be fooled for the better half.
Have been on since noon and currently running at 228.
