I am always looking to use leftover smoked meats in efforts to reduce waste.

I started with some cabbage leaf. Blanched to soften.


1 lb of smoked brisket, 2 cups white cooked white rice, 1/4 cup onion, 1/4 cup heavy whipping cream, 2 tsp salt, 2 tsp pepper, and 2 egg whites. 


Put 1/4 cup of mix in a leaf and roll tucking in side to seal.


Spray a non stick coating to a baking dish and fill with rolls.


Top with 28 oz diced tomatoes mixed with 2 tbsp of pesto, 1/8 cup molasses, and 1/2 cup red wine. Bake at 325f for 4 hours.


Split roll in the center and spread in the tomato topping.


Top with Parmesan cheese !
 
Love cabbage rolls and you did a nice job for sure!

I can never get mine to roll up as nicely as yours though. I get carried away and always try to over stuff them!
