Chicken fajitas on the Blackstone Griddle

Love having a griddle especially for things like fajitas.

Marinated some boneless skinless chicken thighs in beer, soy sauce, Worcestershire, garlic and cilantro and cumin. Let them soak for a couple of days.


Griddled up a bunch of peppers and onions in a bit of olive oil.



Left the onions and peppers with a little crunch to them as I like to know they are in there.

Threw the chicken on:


Flipped it when it was nice a golden brown:


Let it go a few minutes and then cut it up right on the griddle and finished cooking the chicken through.


Threw the tortillas on just to make them pliable:


And now to assemble:


Some guacamole and sour cream:


Some shredded Mexican blend:


The chicken:


Peppers and onions:


And a dollop of salsa (my neighbor owns a Mexican restaurant nearby and the salsa is insane. I barter smoked goods for quarts of salsa haha)


Rolled up and wrapped up:




I always try to make fajitas and tacos in bulk and wrap them up for easy lunches to pull out of the freezer for work. For dinner I had a tortillaless fajita over some yellow rice:




I'm really loving the Blackstone. Makes larger mess so easily especially when it comes to frying up peppers and onions and what not. Thanks for looking!

Hahaha thanks!  I don't really need any of my cookers... but something just happens and they end up in my yard!

Thanks so much for the points Al!!  Hadn't done fajitas yet on the griddle but it seemed like a natural choice and your past post inspired me!  Love the way the peppers and onions come out!

Fajitas are a favorite of mine, and yours look great Chris...nicely done!  That griddle looks mighty handy...might need to put that on my wish list...

Thanks so much for the points Red! Fajitas are one of my favorites too. Always used to order them when I went out to eat. Don't do that much anymore now that I cook most nights so these hit the spot. The outdoor griddle is defintely a fun toy. My dad got it for me for Christmas because he told me "It's the the only thing I know you don't have on that deck!" Haha I love the amount of space it gives you for bigger cooks. Great for sautéing veggies, cooking big loads of breakfast food and what not for holidays and get togethers. Can't wait until the weather gets a little better so I can use it all the time for breakfast.

Fine lookin meal. 

 

You need to try makin your own tortillas, they are so much better than store bought. The same with refried beans...... OMG they are good when home cooked!

 

When I was workin in Mexico the corn and flour tortillas ruin you for the states! So good, so easy. I do love both chicken and beef fajitas. 

 

Those look delicious!

Thanks so much Foam!  hahaha I should make my own but you know I have dough phobia.  I did make pasta though so maybe tortillas are next on my list!

I have a Blackstone as well and I LOVE IT!!! Those fajitas looked amazing by the way. I made some steak and chicken fajitas on my griddle here not to long ago. I don't even like cooking in the house anymore because its so much easier to just do it on the griddle. It makes some great burgers as well. I went and bought a melting dome and spatulas along with a couple squirt bottles for oil and water or butter. Of course I got a press as well and a scraper that makes cleanup a breeze. Like you said breakfast is so easy on it. cook it all at once and not dirty a bunch of iron up in the kitchen. Anybody that thinks they might want one should really just take the plunge and buy it! Again awesome fajitas they looked DELICIOUS!
