New to the site from Silicon Valley, CA

Hello everyone,

 

new to the sight but not new to smoking and grillin, few weeks back I finally got sick of fighting my CharGriller and went down and bought a Yoder Cheyenne smoker, LOVE IT!!!!! the neighbors gardener happily took the CharGriller, I've had a Brinkman upright box smoker for 15 years that I still use for jerky, fish and brined turkey legs. I use hard lump coal and almond wood for grilling and smoking. I also have the Big Easy that I'll be using to cook up a leg of lamb for Easter dinner today

Welcome to the site and congratulations on your new smoker.  I've been lusting after a Yoder for years but shipping would make me cry.  Maybe someday.

Thanks One Eye Jack, last weekend I did my very 1st run in the Yoder with a big tri tip, burned in the new smoker for few hours then added the protein. Going from a CharGriller to this is major transition... I ended up over smoking the meat with almond smoke but the cook came out perfect medium rare, meat came out bitter from too much smoke, wife cut up the meat and made chili the next day, came out really awesome and no bitterness in chili, just burped up smoke flavor most of nite. Corrected the smoke this time with ribs and came out near perfect. With the CharGriller I had to constantly babysit the smoker because temps would erratically change drastically..... Monitoring the Yoder, it stays within a 10 degree temp range consistently, with the Maverick wireless dual temp probe I can sit on the couch or work around the house and not worry about the Yoder...

Thanks, the heat is no problem dialing in with this baby, it's the smoke I have to work on. This thing is super effeciant with heat and smoke, but a little smoke goes a long ways. I backed off 10 fold with the smoke this round and barely made the threshold for smoked ribs vs OVER smoked bitter ribs
