Was shopping for some items for Easter dinner and Prime Rib Roasts were $5.99 lb so I picked up a smaller one (2 Bone) for $36.
Pepper, Salt, Onion Powder and Garlic Powder and into the smoker at 250°. This took 4 hours to hit 142° and then I let it rest for 30 minutes.
It was awesome. I would have liked it to be a bit more pink in the middle so next time I will pull it a little sooner.
