Cheese in the desert

So I am a huge fan of SMF.  Only posted when I first joined last year, but I have lurked on the site almost daily.

 

I live in Las Vegas. I have felt comfortable cold smoking my cheeses in the wee hours of the mornings in January and February.  Now it's getting hotter (it hit 93 degrees yesterday).  At what temperature is it not really safe to smoke cheese?

 

Also,  I am such a novice in the smoking realm that I don't even have a proper smoker.  I use an Amazn tube in my bar-b-que.  Far from efficient, but it's all I have for now.

 

What would you consider the warmest temp you'd smoke cheese at?

Hey Jason,

 

I smoke cheese in my Weber kettle all the time. A bbq grill will work just as well.

 

I'm in Florida & you really can only smoke cheese in the winter.

 

You can put a pan of ice next to the cheese or under it if you have a vertical smoker to keep the temp down. On your grill you could put the ice in a pan on the burners under the cheese to keep it cool.

 

The lowest temp you can let the inside of the smoker get to is 90 degrees.

 

If you can keep it between 50 & 70 degrees that's the best.

 

Over 90 & it starts to melt.

I like the idea of the ice tray.  Come summer, we'll have weeks where the overnight low is over 90 degrees.

Yep what Al said,,, or get some two liter pop jugs and fill with water and freeze,,, no mess and throw right back in the freezer for next time. 

 

A full smoker is a happy smoker

No proper smoker needed you can use a cardboard box if you want to cold smoke something

 

You got the amps and a BBQ your good to go all yr.
