An odd title, yes? To explain - I am a veteran smoker, been using various kettle and and barrel smokers for years and years. I THINK I'm pretty decent at it, not like Olympic-good maybe, but certainly high praise from friends and family and fundraising events, if that's any indication :-)
But I am a total Newbie to electric smokers. I bought a Masterbuilt Digital Electric Smoker last Thanksgiving, used it for one of the turkeys, and did one or two other things before it got too cold outseid, and dark too early. But DST is here, and it will be coming out of the basement this weekend. WooHoo!
So I will be following this forum closely, cuz I can see there are lots of good tips, tricks, and experienced smokaholics here. I will share pics and experiences as I go along, too.
And of course, I am already regretting my choice of electric smoker. I mean, I did a fair amount of research and the MES 30 analog got fairly decent reviews. And at $120 on sale from Walmart, seemed like a great deal. BUT - no adjustable vent, vague temp control dial with only colors no numbers, no option to cold smoke or offset add-on... well, I should have spent the extra $$ and gotten something with more features. Silly me - I figured "What the hell, I do well with a barrel and wood chunks, so get the simplest one out there"
Oh well, live and learn...
