Already posted these pics + more in the fish forum but felt the following would be good to share here in the Electric Smoker forum as well.
For my main application being fish, the stock MES racks are just way too heavy and do not have a small mesh surface that I really prefer for fish, especially small pieces. Had to add the side support rails since the racks were not wide enough. Had to also bend up the back side since these racks were to long in depth.
Here's the heating element flipped over to the center of the chamber giving a much more uniformed distribution of heat.
Here we see the Auber PID and the mailbox mod in action. Both worked perfectly.
