Stupid Question

My grinder has 2 speeds and reverse. I am not sure about using high speed. Wouldn't that heat everything up faster? Anybody use variable speed and why?

My mixer is also a two speed. The directions for mine said to use the high speed for grinding meats. Low for bones, cartilage, etc. I have never used the low speed. I have used the reverse a time or two.

The only way Speed can warm the meat is if the blade is spinning, very fast, in the meat causing friction. Think Food Processor or Buffalo Chopper. In a grinder a higher speed just moves more cold meat against the blade and plate where the meat is sheared and pushed through the plate faster. No issue running on high as the blade is still spinning way slower than the speed needed to chop through the meat...JJ
