Hey Everyone, 

I'm Turk (aka Paul) from Cumming, GA.  I'm a weekend warrior smoker and have almost perfected my pork butts with my current set up.  I'm in the process of moving from a Char-Broil H20 Smoker Deluxe to either an electric or dual fuel smoker (can't decide which to buy).  I'm also planning to try my first brisket this weekend.  

 

When I'm not working or smoking, I play rockabilly and country music with a band here in the Atlanta area.  

 

I've been smoking meet for about 8 months now, and I've been pretty happy with the results.  I'm also trying to determine what it will take to build a cold smoke generator so that I can start doing some cheeses for my vegetarian wife. (I've argued that pigs and cows are vegetarians so technically the barbecue is vegetarian too but she refuses to try it.)

 

Anyway, I look forward to getting to know some of you on the boards and learning some new tricks to make things even better.

Hey Turk.
I have the dual fuel Masterbuilt smoker and feel it does a good job. Did do a couple of mods to it. Removed the original fuel pan and replaced it with a shallow cast iron skillet. Also changed out the water pan set. I like the nice bark it produces when I use wood chunks in the cast iron skillet. While I have never owned one - I read quite often that people are disappointed that the electric smokers do not produce smoke rings/bark by themselves. Anyway welcome and good luck on your choice of smokers. By the way I also own a GMG Pellet smoker that I am still getting dialed in. Been a bit more of a pain than I thought but am slowly getting it figured out.

Hey Buck, 

Thanks for the tip on the bark with the electric.  That plus the stigma of plugging in to smoke meat have been my two big concerns. I've also looked at a 30 in Char Broil vertical charcoal smoker because Amazon has one as a warehouse deal for only $60 right now. I'm really just trying to get to something with a door that gives me access to the meat if I need to mop or spray while cooking and I know that if I'm using both racks on the water smoker I'll have a heck of a time doing that.  I love the quality of smoke I've gotten on the pork I've done so far on the one I have, but I think it's time to upgrade.  


I've read that the dual fuel is good for starting with charcoal, then once the smoking is done, finishing with the propane.  Is that how you use yours?

Honestly, I have only used the propane, never used charcoal. I used the flavored wood of choice - normally, pecan, apple, and/or mesquite chunks in the cast iron tray (skillet) and has worked great for me. The Masterbuilt I have does have 2 doors with one accessing the burner and wood for replenishing without losing much heat.

The only issue I have with mine was it being the 30 inch one, which was a bit small for racks of ribs, but I used the standup rib racks and trimmed the ribs, and all worked out well. This one is easy to keep clean also. BUT getting anything for $60 is pretty darn good also. I guess I'm a bit lazy and did not want to have to keep watch on charcoal...especially for longer smokes.

Amazon had a warehouse deal on it for $153, so I couldn't pass it up.  

Based on the reviews, I also bought some silicone and nomex for the doors and joints.  So it shouldn't leak smoke when I get started. 

 

More than likely it won't be ready when I'm ready to smoke this weekend, but... I'm hoping to get something cooking on it for Easter weekend. 

 

I'll let you know how it goes.  I don't mind keeping an eye on the fire box, because it gives me a break from the kids. :439:

Sounds like a smoking good deal - setup! Nice looking. Add a good thermometer for the meat and box and you should be good for a long time. I like the ash tray idea also!!

I've got a Maverick dual probe with a spring clip for the grill and a probe for the meat. I'm hoping it will be sufficient but may need to drill and add a secondary thermometer for the different racks.  Especially if I end up smoking multiple or different things at the same time. 

I'll keep you posted on it once I get it in my grubby little hands.
