Good looking sausage. I've got a request to make chicken sausage. Did you grind the skin into your mix? Did you use cure? Finish IT? Sorry for all the questions
Thanks Rob, we ground some skin but took a majority of it out. In the hot water bath to an IT of 165 without cure. If you were planning on smoking it you would def want to add cure & let it cure over night prior to smoking. No problem on the questions that's what this site is for hope that helped.
