Found this site recently, got up early this am to fire up my bullet smoker and couldn't sleep from the anticipation. Figured i'd sign up and say hello. Hope yall havin' a good one! Great site here, very helpful. I'll post some pics of my PP when they're done.

I forgot to talk about my equipment and experience:

My dad bought me a side-firebox 10 years ago for a wedding gift. I've used it quite a bit and love the flavor but wanted something less labor intensive. So my buddy gave me a broken 60 gallon air compressor tank and I could see the diamond in the rough. I had some rebar and a burner laying around so I fired up the welder and got to work. Ended up with a very nice vertical smoker. That's what I'm using these days. I used to work at a meat market called "The Best Stop" during high school. Learned a lot about preparing food, making and smoking all kinds of cajun sausage in my time there. Still, I'm a novice at smoker cooking, but looking around at this site, I'll catch up quick. Here's my build:

Welcome to the site!  I've been through two divorces and they both took all my pots!  They didn't even cook!  Women.....humphh

That's my next meal, smoked boudin. The best way to eat it. For those who don't know, boudin is a type of sausage that's suffed with rice, Boston butt, onions, bell peppers, and liver. Usually it's boiled and served but if you eat it grilled or smoked you'll never want it any other way. C'est bon!!
