Pastramiwurst! The obsession continues..

As to not unintentionally leave someone out, thank you all for the kind words and the points. I am happy with the results like I said, but it still gives me something to play around with since the pastrami flavor is not where I want it.  hahaha I won't be trying this again for a little while because my sausage stock is getting ridiculous.  I have some eating to do before I get back on the Pastramiwurst horse again! Thanks again for all the advice and encouragement!

Chris I will be doing mine tomorrow just made a new batch of rub,letting that get happy over night.Doing mine a little different

Oh Man! I've been gearing up to try my first Pastrami and now I see Pastrami sausage! Now when I do the Pastrami all I'll be thinking about is "Pastramiwurst" (TM).

Pastrami is one of my favorite things to smoke and I am currently on a sausage bender so I had to try it haha. Get out there and get a store bought corned beef to try it on. Better time than ever price wise. Thanks so much for the points and make sure you share your first pastrami.

Got a 3# piece soaking now to get the salt out before vac-sealing it and freezing.. Work schedule is horrible the next couple of weeks, but there'll be a post mid-April. Planning to use chef jj's rub.
