New Stuffer, Scale, and A-Mazen-n 5x8 Smoker

Got new stuff yesterday

New stuffer. Didn't go through Amazon and paid about $10 less than advertised below. Was using a Gander Mtn grinder/stuffer and stuffing casings just wasn't working right.


Also got an A-Maze-N smoker to help cold smoke some pork belly in my MES 30. Along with a small much needed food scale. Now I just need my casings to get here from The Sausage Maker and I can get back to making some food.
What a great hobby/addiction this is!

Made and stuffed 5 pounds each of Bangers and Bratwurst this morning. Came out pretty good from what we can tell. Stuffer was very easy to use and cleaned up quickly. But, had enough meat from each left in the stuffing tube to make 3 good sized burgers! Any ideas how to get ALL the meat into casing?
Below is a pic of a few of the Brats we're having tonight for dinner:

Latest batch of Smoked Andouille today. Letting it bloom then will cook some up tonight. Got the recipe from one of my uncles back home in Southern Louisiana. It's an old family recipe. Best batch I've made so far!!

I've put moistened bread in there to push the last of the meat through. Sometimes works, sometimes doesn't. I've learned to live with the waste.
I'd be interested in that Anduille recipe, if it's sharable 😏 Just thawed the last of mine last week...
