She Who Must Be Obeyed advised me I was making chicken wings. I only had a couple of hours to dinner and I had other things to do so I wanted to try something easy.
I mixed 25 ml (2 tablespoons) honey, 25 ml (2 tablespoons) commercial teriyaki sauce and 1 ml (1/8 teaspoon) Sriracha. I would have liked to have added more Sriracha but if I made wings hotter than SWMBO likes I would hear about it.
I set this glaze aside.
I tossed 12 wing segments in 15 ml (1 tablespoon) of vegetable oil. Then I sprinkled 10 ml (2 teaspoons) of a salty rub over them (I used Louisiana Grills Hickory Bacon Rub). I tossed them to coat with the rub.
I put the wings in my pellet smoker preheated to 325 F.
I smoked them for 1 hour. Here they are after 30 minutes.
Here they are after one hour.
I put the wings in a large bowl. I heated the glaze in the microwave and poured it over the wings.
I tossed them to coat them with the glaze.
Here is the finished product.
We served them with rice and broccoli salad.
There was a great sweet, salty, spicy taste with a crisp skin and a sticky glaze. The true measure of success? SWMBO liked them!
