I am going to be smoking a roll of blue and gold sausage patties in the morning and I am wondering what temp and for how long to smoke them for. Thanks in advance.
There is no Cure#1 in it so they need to be smoked at 225°F or higher. Cook time will depend on the pattie thickness. For 1/2" or less, about an hour. Cook to an Internal Temp (IT) of 165°F or no Pink in the meat...JJ
