Hey everyone.

Not really sure what to say. I'm 31 years old. I'm from southern Indiana. A few years back I got into smoking. My current rig is an offset stick burner.

Recently our local locker plant burnt down and they have no plans to rebuild. So I decided to get into sausage making. Right now I'm only making fresh sausages such as brats. I feel like I make a good quality, tasty product. I'm looking to step-up my sausage making game and start making stix/summer sausage.

I stumbled into this forum when googling what type of smoker to use to maintain the low temps needed for stix/SS.

Welcome. welcome1.gif I have never done any sausage, brats etc on the smoker.....but sure do love to eat them. Maybe I will have to try doing some - as soon as I master my new Daniel Boone Pellet smoker. Still playing with it now and dealing with varying temperatures. But practice makes perfect they always say.
