First Brisket (flat only) *QView*

Hello! It's going to be in the 60s tomorrow in the Omaha Metro sof I stopped at Sams and grabbed a 7.75# flat. This is my first Brisket so I hope all goes well. After a quick trim I hit it with 50/50 kosher salt/course black pepper. It will go in the MES40 tomorrow morning. I'll use my pellet maze with pitmasters choice pellets from Amazen pellets for smoke. Stay tuned!

Got the brisket on at 630am. Maverick set at 240ish.

3 hours later...



I feel like it's moving faster then I thought.

Also my pellets burned up way faster then I thought they should...



Any thoughts?

4.5hrs in and we stalled around 167F. Time for foil.

The brisket looks perfect so far.

 

I think this is going to be a good one.

Pulled it after just under 8 hours. It was 201F in the thickest part and 196F at the thinnest. Probe went in like butter. It's now wrapped in a cooler until dinner tonight. Money shots coming soon!

Time for slicing. One thing I don't like about electric is lake of smoke ring. Tasted great! It was tender and passed the pull test.
