I know I'm late on this. Life got busy for a bit.

Here's my WSM cooks and the q-view I could capture during the process.

While cooking the ribs my new Maverick ET-732 thermometer showed up from Amazon

Because it's Lent right now my Father (who I would be cooking this pork dinner for) observes this religious commitment. And he gives up read meat until it's over. So he eats fish.

I want to involve the smoke in his dinner as well as the rest of the family. What can I do about this?

Now this might be nit picking, but I've always considered pork to be one of the white meats.  Might work????
