First I have to appologize to NOAA. They said it was comming two days ago. They were so accurate that some schools closed all day, and some closed at noon so the kids could get home before the storms hit. I am laughing at the weathermen, seriously who can predict tornadoes two days in advance and even call it to an after lunch  event?  I am laughing and making jokes about these guys for two days for thinking they could call the weather that well. LOL

So I went out at lunch today and threw a 14lb butt in the MES40.


I washed it, I scored it, I patted it dry, I rubbed it with Pig Squeal.


Preheated to 275 (which is really around 230 degrees), I loaded the adjustable oval pellet smoker to really really long smoke and filled it with hickory & apple. A fresh clean tin foil pan under it. And it started raining. Hmmmmm.........


LOL.. it swole up and browned the fat cap and looks like the sweet potato casserole with browned marshmallows on top. 


What shall I do while the storm rages and the pork sweats?? Well what goes good with pulled pork..... Hmmmmm..... Buns stupid! LOL


Flour in the flour bowl. Yeast is added to warm water, a little sugar and a little flour to bloom and the egg set out to warm up. Not the level of the liquid in the 2 c measuring cup.


Now note the foam in that measuring cup.... the yeast is good. I add the egg, some honey, and some yellow food color. Why? because that what the bakeries do with the good buns. just a little yellow color. Don't over do it.


Beat it, whip it, knead it, its a great stress releaver! Roll it roll it up and throw it in the pan... wait that not here. Set it in the bowl and put away from drafts. 


At this point I checked the old pork piece again.  Weather is nasty, rain comming down sideways and it hurts. Sheriffs cars with lights running down the road, ambalances with lights, fire trucks, rescue vechiles...... Hmmmmmm..... Maybe I should check the news.

At this point we lost power, hehehehe.... I was prepared! It runs everything, the house the AC the elevator, all the freezers, and all the reefers. RAAR!


Flag at this point was about to be town off the pole. So I decided instead of making slaw tonight, I'll worry about it tomorrow since the head of cabbage is in one of the garage reefers. LOL 

Electric company boom trucks go breezing by the house with a police and ambulance escort. Then the doors open next door and the fire trucks leave the station .........  Maybe something is going on down river. Neighbors show up, I have power and smoke although I doubt they could smell it going by so fast...LOL. Neighbor said he saw a tornado in the field behind the house.  I have been all over west Texas and SE NM and the Texas panhandle and never seen one. Pffft!

Back to the cookin, I punch down the bread dough, and make little bity buns.


With sesame seeds to be fancy (there was company in the house).


I like smaller buns instead of those monsters I always seem to end up with. This time it worked, 16 buns.


To get away from the neighbors I braved the weather and went to check the pig. Looks good!


Pull the buns from the oven, They are good, nice color, tender, but between the egg and the shortening I added this time .... well they are awfully moist and tastee. Now what to do with 'em till tomorrow.


TUPPERWARE!! What would we do without it, fill the trash dumps and oceans with cheap plastic bags?

Wow the TV is showing some really nasty pictures just down the road. I mean really just down the road. Of course it was a trailer park. A couple of 18 wheelers a water tower...... Hmmmm.... maybe the neighbor really did see a tornado.


Thats the last shoot, everyone has left the power is back and the phone calls and emails are slowing of friends and family checking.

Wind is back up but I think I'll go take the trash out, check if its past the stall, and see how much rain.

Its now been on 12 hours, Be back in a mins. with the last photo for tonight I imagine.

Ok, 2 AM kinda chilly for a change feels good outside.


Thats the last view for tonight, man the wind is gusting again.


Got the cabbage and made the cole slaw. It was my last fresh head and was partially frozen..... Grrrrr.... not enough trips to the beer reefer lately! Best to make it today so it can pull out all those juices to mix together. And speaking of that...............


Fresh cucumber (oriental seedless) and onions. Mom called 'em summer pickles. She just mixed vinegar, sugar, and water and hid them in the reefer for a day. I swear vinegar is a miracle drug....

Thats it. I'll pull the pig later, its at 175 IT now.

Thanks Richie Its all over, was a little windy last night. They called off the search for bodies about 3AM. That little RV park is a short walk from the house!

Dang good thing it didn't mess with my smoke, I'd have gotten made then!

Thanks for that vote of cobfidence, course with a squeeze bottle of JJ's Famous Finishing Sauce its pretty hard to make it inedible. LOL

Yeppers, 22 hours in the smoker 220 to 250. set it, pull it, and have a sandwich.

Damn! its looking good!  And those rolls...I have to conquer my fear of bread making haha.  I'll be keeping an eye out for the finish!
Listen if you can spend a whole 24 hours smoking a butt, less than 5 hours during the smoke for bread is no hill to climb. I think I have a couple a threads with light bread recipes, and they have that Amish bread, and Betty's bread, bread is only scary cause someone who didn't know what they were doing told you it was. If I can do it and I didn't have a recipe, anyone can. then once you establish 'you' recipe you ,mold it to work for each other bread you want to make. Rye bread to french bread to buns to lightbread dough, all basically the same recipe. When you are comfortable with your dough, one dough does most of what you want. Its really easy.

Well I have it out the smoker and cooled on the counter, I have pulled it and added JJ's, and I am going to be sick no doubt eating all that fat cap which was rubbed and slowly melted down into no doubt what the God's called ambrosia. BUT its so good you can hear your arteries plugging while you eat it!

I will wait till after to supper to post more pictures so I can do a "Bear View" and not just keep spamming a little at a time.

Thank you sir. And it did get pretty nasty yesterday and last night. The RV park they showed I could have easily walked to. All my life I have made the comment we never get tornados here because of the river and the levee. Cold water and the 20 ft raised dike. Much the same when I lived in NM. Near the caprock, the difference in elevation made tornados near impossible to make the transition.

Well someone sneezed when putting yellow food color in the bun dough, so they are quite festive! LOL And it had been to long since I made bread. I should have left the shortening and egg out of it. They had flavor and moisture, but the also retard some of the rise in doing so. makes 'em a little heavy. But still a damn site better than store bought. LOL

Just watched the evening news about the RV park.:51: glad to here that twister missed you.

Anyone that would defy mother nature, and cook a meal that good, deserves a crap load of points, however I can only give you 1.. :points:

Tornadoes either kill you or they don't. Obviously I have been lucky to have had only a few close calls.

People in San Antonio told me they rarely touch down there.  I have watched them come down and bounce right back up without touching ground there in the main part of the city. Historically there have been some bad ones in the San Antonio area, though.  My closest calls came a a few states further north.

It is your dang hurricanes that wipe out a whole wide swath that would scare me to death?

Ok, I have some "Bear View" now!

Somewhere among the electricity going on and off and the generator going on and off and changing the batteries in the Maverick, I am guessing I set the cook time wrong. At 9 AM I check'd it at 196, was looking for 200+ more specifically if I could 203. But you never know. At noon I checked again and it was at 160 so somewhere it turned itself off. It no doubt was looking after me cause the the meat, tender and juicy.


I think we have mice, while it sat on the counter cooling, Some if that rendered fat better known as ambrosia, dissappeared. Must be mice.


It pulled like a dream, there was no piece too hard to shred. I did package the fat cap separately though.


There's the pulled pig, right next to the squeeze bottle of that culinary delight, the magic fix to any cooking problem, Chef JJ's miracle finishing sauce! Always keep a bottle of it in the back of the reefer...... you never know when you'll need it.


Mixing up my secret pulled pig sauce for the bun. I'll heat it while buttering and toasting the buns.


There it is the "Bear View"! Pulled pig with sauce on and toasted homemade bun w/ cole slaw & Summer pickles..... and another 'hunk' of ambrosia... It was a good day to be alive!

Its there my friend...... I ended up with after supper with 5 pounds. Still doesn't seem right but thats what I bagged and tagged.
