Stuffed chicken thighs wrapped in bacon..

I seen this recipe on TV rew yr back, so I can't take credit for thinking this up. I'm not that smart. Lol.

Anyway the players are, smoked xx-sharp cheddar and blue cheese, chicken thighs, bacon, jalapeño's and red onions.

I boned and skinned the thighs and pounded them out and seasoned with some rub.
Chopped up the onions and jalapeño's cubed up the cheese.

I used a glass bowl for the form, and lined it with the bacon

Added the chicken thigh and other goodies.

Grabbed the ends of the bacon, and wrapped them up securing them with a few toothpicks.

Onto the pellet smoker @225* for 1 1/2 hrs.

I took them off while the grill headed up to 500* and then put them back on for a few minutes to crisp up the bacon.

Great smoke flavor, the blue and chedder along with the jalapeño's and onion was a great mix of flavors.
 
These look absolutely incredible! I will be stealing this and trying this weekend.
 
Wow! Them make me question the use of my chicken thighs I smoked last night! Thanks for sharing! Definitely have to investigate further on this chicken n' bacon goodness..

Wife liked them too. She kids me on my smoking habbit as she calls it, but doesn't complain about the food, lol. Thanks for the point..
 
They came out better than expected. I'll definitely make them again, but probably stuff with different ingredients. Oh the possibilities.....

Those look delicious!! Maybe you didn't come up with the recipe, but at least you remembered it and shared.  I'll be trying this one for sure.  Using the bowl for a form is a GREAT idea.

DS, thats a teardrop soap dispenser. It's usually in our 5'er, but the wife likes it so much it makes its way
