Korean Kalbi Spare Ribs: an experiment!

One of my favorite things to grill in the summer time is Kalbi beef short ribs. So I got a good deal on a rack of spares and I was thinking maybe I can use the same marinade for a rack of spare ribs and then smoke them. So here are the ingredients for the marinade:

First I rubbed the rack and the rib tips with brown sugar:

Then I grated the apple and the onion:
Mixed up the marinade:

Put the ribs in a bag and poured the marinade over them.

Game plan is to smoke them, boil the marinade and baste the ribs during the smoke. Going to smoke them on Thursday so they have a couple of days in the marinade. Be back in a couple of days!

Got them on at about 10:30. Smoking on the WSM with some cherry wood around 250.


Boiled the leftover marinade for a couple of minutes so I can safely use it for a glaze:

After about 2.5 hours, I glazed them with the boiled marinade:

After a another hour or so I decided I am going to wrap theme or a little bit with the marinade to see if I can get even more flavor on them. Here they are just before the wrap

Well... When life gives you overcooked ribs, make Korean style pulled pork haha. Got busy around the house, forgot all about taking the ribs out of the foil. Must have been in for about 3 hours and when I opened them up, they looks like this.


I poured the last of the boiled marinade in and mixed it all up. I have to say, this stuff is awesome! Hahah what a lucky fool I am. I would love to have this on a slider with some spicy kimchi. So if you ever feel like ruining some ribs and making great pulled pork just be a dope like me haha.
