Made up 5 lbs of SA Droewors. This is the Poli recipe.

My dry items. Cure is the lower left. The wet items top right. Add last. Be careful with the vinegar mix, remember it will separate the fat from the lean, don't over mix it.


All the dry mixed together.


Now time to mix the dry and wet. 


In a zip lock and fridge overnight.


Forward to next morning.

Stuffed into 20mm clear smoked collage. These will not get smoked.


Hanging in the closet. Yeah i know i told my wife i won't be hanging much in the RV.. BAAAAHAHAHAH.


Ok an overnight in the closet. Yikes no air flow. Don't need spoilage so i improvise. 

In dehydrator at 80* Really no need to rotate but i think i'm going to anyways.


Maybe they will be done on Wed.
 
I gave a SA friend I'd love to surprise with this. Will you share the details? And also...why no smoke? Thank you for post! Curious!
 
Droewors in non smoked, They just hang to dry sorta along the lines of Biltong. I guess if you wanted you could cold smoke or just add a tad of smoked powder to the mix.

This recipe is from the Len Poli site, I will not post it due to Copy Write laws. Just google for it.
 
Nepas, I would just hang them.  The dehydrator dries them out too quickly.  I've made biltong and droewors and both came out great.  Try a biltong box with a lightbulb and a PC fan.  Works perfectly.

I didn't like the lack of air flow in the closet. As for a drying box really no room being we are full time RV'rs
 
Took some empty racks and separated them between the full racks, Placed the full racks cadywompus so the air flow is disrupted over the sticks. looks like maybe done tomorrow.

A PC fan will solve your airflow problem, but without a lightbulb, your humidity may be too high.  Let us know how it tastes!
