Pork loin, Cordon Bleu, plenty of q-view

I bought a loin at Sam's a couple of days ago. Cut it into 4 pieces. Froze two of them. Put one in a curing brine for CB, and the last one I stuffed with ham, swiss & sliced fresh jalapenos.

Here's the loin:


Cut it up, and sliced up a ham that I just cold smoked for 4 hours.


Next slice up some fresh jalapenos, and unroll the loin. I left the fat cap on.


Next pound it out so it's all the same thickness.


Lay the ham on, then the jalapenos.


Next the Swiss cheese, roll it up & tie it


Score the fat cap and put some mustard & rub on it.


I really overstuffed it so I stood it on the end & pushed everything back inside then wrapped bacon over the end & tied it on. Then put some bacon over the top & wrapped it in plastic wrap to season in the fridge for a few hours.


Into a pan & into the smoker, using hickory & red oak for the wood today.


Pulled it out at 140 IT and rested it for a couple of hours covered in foil. The carryover cooking would bring it up to 145. I wanted the cheese to set up so it wouldn't run out when I cut into it.


It came out perfect, nice & juicy and all intact.


Judy baked some Brioche buns & they just came out of the oven.


Here's my pork loin Cordon Bleu sandwich, with some homemade dills.


Of course with an adult beverage!

Ms. Betty is a baker. I would have eaten that loin with aspargas and been happy, but that bun, a sandwich, I love a sandwich!!  It was the perfect setting. 

Mastering simplicity can never be overstated. I love it!

Seems like lately everything I smoke we turn into some sort of sandwich. I think it's because Judy is such a good baker.

That looks over the top good, nicely executed. I love butterflying those pork loins & stuffing them, I do a cranberry apple chutney stuffed loin that people love.

Judy is an incredible baker, she finds a recipe & duplicates it to perfection, or changes it to even better.
I am leaving the now frozen tundra for the sunshine state tomorrow morning so I can be by mid afternoon for a take out.

When I wrapped it, it almost blew apart. We used about 20 feet of twine to hold it together.

Hey Kevin,

Her mother's name was Betty. She was a killer cook too. My Mom couldn't even boil water. I think that's why I married her. She would cook me these awesome meals & I just had to have more. Some of the recipes we use are from her Mom, so she would just be reminded of her Mom if she see's your post.

A Perfect Combination   Everything looks great.  That is my kind of meal (I like Jalapenos)  Tell your wife on a scale of 1 to 10  her baking is about a 15  Nice JOB all the way around.
