I got Two 9 pound butts rubbed and put in the smoke at mid day looking for 210 degrees and waiting for an IT of 205

I like oak for smoke

 

I like to rub the butts with Olive oil and apple butter

then

Garlic granules

Cumin

Black pepper

Salt

Paparika

Onion granules

 

This time I rubbed some molasses in also, interested to see what that does

 

Nothing too complicated sometimes some other herbs just depending on how I feel

11.5 hrs in and off the smoke, time to rest.

Pulled out bones by hand and created a mountain of smoked pork. Yielded 15.5 pounds pulled, falling apart in hands.
