Thin sliced beef and burnt ends galore

Sometimes everything works out in the (burnt) end...

I had a friend ask for some thin sliced smoked beef and I can't have a smoker running without trying to fill it! So I decided to also make some burnt ends from a couple of small chuckies, and also snuck a couple of fatties on for my kiddos and a rack of spare ribs for my brother.

First mistake was using some charcoal that had gotten a little wet last fall. It was only 1/4 of the charcoal I put in the smoker, but it put out white billowing smoke for a looong time. With schedules I had to put everything but the fatties on and cross my fingers that TBS was nearly there.

Yep, that was my second mistake. An hour later it was still not quite to TBS, still too white. Eventually did calm down, but was afraid I'd ruined the top sirloin roasts. So since they were for a friend I decided I'd better make a grocery store run for replacements and turn the first batch into more burnt ends.

So I had double the amount of burnt ends as a result, and they were still quite tasty, just not quite as good as normal. The sliced smoked beef, though, was fantastic on the second batch! Thick W sauce and SPOG.... it was hard to let my friend have it!

Only got a few pics, but here they are. The beef was at 150, which was as high as I could morally take it but I know they didn't want it too 'juicy'! Time for me to make some more for myself, but I'll wait until I'm burnt out on the burnt end lunch packs.
