Sour Dough Brisket Samies

Well the wifey wanted a Reuben. So I broke out the slicer and the leftover superbowl brisket.

 


Sliced paper thin.

 

Now I am a firm believer in not using butter to pan fry my bread before assembly. I use dukes mayo. Pan fried the brisket slightly to warm, and the kraut. Tossed in the broiler for a minute to melt the provolone. Gave a generous slathering of thousand island.

Left overs aren't a bad thing in my house. Just one step away from going to something else.

Today my Superbowl 50 brisket point and butt are cooking into a base for Carolina hash and Brunswick stew. My smoked chicken usually winds up in a chicken stew or a pot pie. My leftover chipped steak goes to the packer and frozen then I make hot dog chilli. 

 

The only true leftovers in my house that get tossed are fast food, and seafood. My dogs wont eat fast food. That's saying something.
