Elbert German Sausage Clone

I am looking for a clone recipe for the sausage served at the German Sausage festival in Elberta, AL. It is great, but I only get a couple a year. I don't even know where to start.

This is a tough order to fill because the odds of having an experienced sausage making member with the ability to reverse engineer the recipe, are pretty slim. Are there any national brands of say Brats, you can compare the flavor too? Unfortunately asking for or searching a generic term like German Sausage Recipe is tough. There are a multitude of styles of Wurst and hundreds of variations in various regions. I feel your pain. There is a small family grocery in a one horse town in PA that sold what was labeled, " German Sausage ". Really tasty stuff and they aren't talking either...JJ

I know it's a long shot. I basically am looking for someone to chime in who has been there and partaken.

What I know: served as cut lengths on bun. Not a short link like brat. Flavor is well balanced, and I can't assertion what's in it. Black pepper by visual, but not as high flavor note. Not spicy not sweet.

Around end of October, the town puts on the typical festival/flea market with the exception they sell grilled "German sausage" on a bun. You choose toppings and beverage. I go over and grab a couple each year.

Oh, and a local guy makes it to their recipe. Can't find the recipe, or the supplier

From your description, it sounds decent... flavorful, but not overbearing.

 

Probably the best shot you have is to strike up some conversation with either the vendor or the group that puts on the event, and try to work backwards to the source (the local maker). They may or may not talk...
