Low temp cheese in sticks?

Snow and cold today; planning a batch of snack stixs using Big Casino recipe.  I have a bunch of regular hot pepper cheese, not the special high temp stuff.  I know it will melt, but if it melts out in little puddles within the stix that doesn't seem like it would be much of a problem.  But, remember that I tried making stix with duck fat several weeks ago and that was a bust as the fat melted right through the casings.

Can I get by using the regular cheese diced up small, or would this be another mistake? 
 
I would say not to use it, but I'm no sausage expert. I always have used the hi temp cheese. If you don't get an answer soon, then PM Boykjo. He will be able to answer your question.
