Well first time using this smoker some of the casings got to hard and I still have to finish them in a water bath none of the meat is done so the therm says. But that's ok live and learn some of them are perfect. That's the ones I will serve at the party and I will eat the rest. But I'm loving the learning and eating. Heck I've been a machist for 30 years and I'm still learning that

Never had it either, my son used to hunt them in the Everglades with a bow.

His buddies & him always cooked them in a pit over coals, or on a spit over a fire.

He said they were real good. I think they just look nasty.

Would like to try some of that sausage you made though. It looks real good.

Some of them just don't look cooked.

If you checked them with a therm, I know that's not the case, but it sure looks that way.
