Pellet Smokers

I am committed to exhausting all means of trying to make the  A-Maze-N Smoker work for me in my 40" BT MES.

 

Now, with that being said, if all else fails for me, has anyone tried or does anyone use the Vortex from Smoke Daddy and if so, how well does it work???

Talk to Mr.T 59874...He's the Smoke Daddy Guru around here. Bearcarver uses and AMNPS in his MES BT and would have the Scoop on what your problem may be...JJ

Put a mailbox mod on your mes. It's cheap, and anytime you have to add pellets or want to check on them you won't have to open your smoker. The amnps won't give you any problems after that. Been using mine for years.

Yeah I know that from reading what others say about the mail box. No  doubt it will work and solve my problem, but if there is a way, I would rather solve the problem without adding outside attachments that I have to hook up every time I use smoker because I use a Masterbuilt Cover on my Smoker and  I would have to disconnect the mail box when thru each time.

I tried to message him and the site said Mr. T 59874 doesn't exist

I sent Mr T a pm with a link here. I did notice I put a Period after Mr and he doesn't. Maybe this confused the system...th_dunno-1[1].gif

Personally, I have not used the Vortex. It does appear to have good airflow around the pellets, which is needed in many environments and would eliminate the at times problematic turn in the tray smokers.

 

The amount of smoke could be adjusted by using different depths of pellets or by burning in one direction or both.

 

 I need another smoke generator like a hole in the head but being at a fair price for it's porpose, a Vortex is on my shopping list.

I'm going to try the Tube from Amazing Pellets and if it doesn't work, I may try the Vortex. I am sure the "mail box" will work, but I would like for the Tube or Vortex to work with out adding an outside contraption.

Either of the generators you are considering will be good. Keep in mind that the “outside contraptions” that you refer to, help in significantly reducing creosote.

The deafening silence must be because no one has tried them that cares to post about it. I read up on Smoke Daddy and The Smoking Gun after I got my MES. That's why I chose the AMNPS. Well, also because it was overwhelmingly recommended by many SMF members with MES units.

Plenty of posts on Facebook but most of those from pellet grill or gas grill owners. Haven't seen any MES or electric smokers posting. Probably because they already have a tray or tube and the Virtex is relatively new

I joined both smoking and grilling groups on FB but I haven't checked them in over a year or more. I keep forgetting about them. The only electric smoker posts I read are here. I guess the majority of members who own this type of smoker own a MES. The pellet grill and gas grill owners have their own groups here.

 

Haven't heard of Virtex but then I'm not shopping for another pellet smoker since I'm happy with my AMNPS.

It's actually Vortex - my bad on typo.  AMNPS tray is a good product.  I have the tube which I recently used in my gasser with salmon.  Did an awesome job.

Now I feel silly. I didn't realize it was a typo, just a brand I never heard of. From what I read when I was shopping for a pellet smoker the tray was a better fit with my MES 30. I've heard the tube works very well in many smokers and you just confirmed it. Do you brine--wet or dry--or salmon before smoking?

No problem

I didn't do either. Dusted the salmon with Penzy's Mural of Flavor, smoked for about 30-40 min, then moved tube to upper rack and cooked salmon by indirect heat. Made for a nice subtle smoke flavor on the salmon

Like your answer. A few people I've talked to advise brining but I don't like extra work if I can produce a great dish without it. I tried a dry cure for smoking salmon last year. I used too much. The over amount of salt along with dry smoked hickory particles on the salmon made me sick. I would prefer just to apply a dry rub and smoke. What wood did you use and at what temp did you smoke?

It was a mixed blend from Amaz-N. I believe it's hickory, Apple and cherry. Just long enough to bring in some smoke but not over power. Almost a wood fired flavor. This was one of those KISS moments (keep it simple stupid)

Todd sells a Pitmaster's Blend (which he also included with a new pellet smoker) which is cherry, hickory, and maple. It's a great blend and adds good flavor. Cherry wood pellets on their own are hard to keep lit. The hickory and maple in the blend fix this. I think I've almost used up my stash so I might get more when I order replacement packs o' pellets.
