Update... My pork shoulder has been in since 930 this morning. I had it set at 235 and the internal temp is only 216. I'm guessing because of the cold weather. So I bumped it up to 250 to see if it raises the temp inside the smoker. yahoo.gif

I'm assuming by Internal temp of 216°, you're referring to the smoker temp.


Setting it at 235° or 250° is fine, but you're pretty much guessing what your actual inside smoker temp is until you get your Maverick.


I never trust anything the MES Digital readout says the temp is.
