Hey all!

I decided after my Fiancee complained about not having really good barbeque options here (she is from Texas) to ditch my gas grill and bought a RiverGrille grill/ offset smoker. It has been a lot of reading and method absorption here but my first go round with 2 whole chickens turned out great!

They took a bit longer than I expected from my readings, but no big deal!

Welcome from SC. This is a great site with lots of really good folks who are always eager to share their ideas and tips. All you have to do is ask and keep reading.

Tip #1 Look at the search bar and read about spatchcocking chickens. That's my favorite way to do them now. They cook quicker and more evenly. Also easier to season the inside.

Tip #2 It's not too hard for a fiancee to find her way back to Texas. A wife is harder to motivate and much more expensive to relocate.
